Working biodynamically since 1998, this family-owned domaine has been run by Aurelie Fayolle and Arnaud Geschickt for the past 10 years. Found across 4 hectares in Ammerschwihr, the team work symbiotically with the environment, planting trees to increase ecological diversity and working the land with Iris, their mare. Crémant d'Alsace NV is a blend of 80% Pinot Blanc and 20% Pinot Auxerrois from 40-70 year-old vines. Soils high in CaC03 offer delicate and chalky bubbles with classic Blanc de Noir notes of blackcurrant and fruit pastry with a just little oxidation on the nose. Crémant d'Alsace NV would pair well with a fried squash flowers stuffed with goats cheese.
