Còsmic Vinyaters, led by Salvador Batlle Barrabeig, is a project which connects two Catalunyan landscapes. Vineyards spread across the inland Alt Empordà region hug the base of the Pyrenees, while those further south in Baix Penedès are more coastally influenced. The latter sees a combination of autochthonous Catalunyan and foreign varietals, while those in Alt Empordà are predominately hyper-local. By working this way, Salvador and the team encapsulate not only the wine traditions of the region, but also a mosaic of terroirs and climate. This energy flows through the wines, all of which are hand-harvested in accordance to the lunar cycles and made without filtering, fining, or any additives. Valentia 2025 is 100% Carignan Blanc from 62-year-old vines with sandy-granitic soils. Grapes are macerated on the skins for 24 hours, then pressed. 50% of the juice undergoes spontaneous fermentation 50% in stainless steel, while the other 50% is aged in French oak barrels for six months. This is Salvador's favourite from his wines for a reason - mineral-driven with a structured yet silky body and delicate notes of lime leaf, lemon blossom and fresh white pear. Valentia 2025 would pair well with Txangurro al Horno (Basque-style baked crab).
