Còsmic Vinyaters, led by Salvador Batlle Barrabeig, is a project which connects two Catalunyan landscapes. Vineyards spread across the inland Alt Empordà region hug the base of the Pyrenees, while those further south in Baix Penedès are more coastally influenced. The latter sees a combination of autochthonous Catalunyan and foreign varietals, while those in Alt Empordà are predominately hyper-local. By working this way, Salvador and the team encapsulate not only the wine traditions of the region, but also a mosaic of terroirs and climate. This energy flows through the wines, all of which are hand-harvested in accordance to the lunar cycles and made without filtering, fining, or any additives. Destí 2025 is comprised of 90% Muscat Alexandria and 10% Grey Carignan from the sandy Capmany vineyards in Alt Empordà. Grapes are very lightly crushed by foot, then macerated for 12 days with the skins and stems. Spontaneous fermentation then takes places in stainless steel tanks and the wine is aged for a further three months on fine lees. Like previous vintages, this has a beautifully aromatic nose of orange blossom, white jasmine and ripe peach. This is followed by fresh notes of underripe stone fruit with a bright, structured acidity. Destí 2025 would pair well with Pa amb tomàquet and anchovies.
