The Bergkloster estate has been in the family for five generations, now tended by Jason who has been studying winemaking since 2013. The mountainous vineyards cover around 8 hectares in Westholfen, growing from limestone and clay-marl substrate. Despite the risk, Jason prefers to depend almost entirely on nature during the growing period, harnessing the wind and landscape just as the Roman's once did in the area. Steeper slopes allow the sun to shine directly onto the grapes, resulting in full, fruit-forward wines. Grapes are hand-picked and wine undergoes spontaneous fermentation without fining or filtration. Lebendige Weiss 2023 is the older sibling of Cuvée Weiss 2022, a blend of Bacchus, Huxelrebe, Pinot Gris, Pinot Blanc, Sauvignon Blanc, and translates to living wine - and ode to Jason's winemaking philosophy. Grapes undergo a short maceration and are then pressed and aged on the lees for 9 months before bottling. Fresh with juicy tropical notes and an ultra-refreshing, crunchy salinity. Lebendige Weiss 2023 would pair well with grilled mackerel and herby potato salad.
